Fiber optic guitar, what is it and what are its advantages?
Unfortunately, the comment format isn't capable of handling my response to this question.
Section 5 of the article you linked lists the supposed advantages of such an instrument. let's go through them ...

Toslink output only works when the cable is not fully plugged in
My guess would be that the sender/receiver LED is likely misaligned with the socket, or the plug is bent so that you need to back up the fibre in order to get any coverage (stray as it is) at all.

An Optical to RCA adapter will work fine. There will not be any noticeable latency.
Just make sure your amplifier takes 1/4" or RCA input.
