My Raspberry Pi supports HDMI audio out, in digital form. The only DAC I've seen with HMDI input is the NAD M51. Am I right that this will convert to analogue out? Also, does an HDMI audio to S/PDIF adaptor exist? Thanks.

HDMI is implicitly a digital interface, as is S/PDIF. It looks like the NAD M51 will convert HDMI inputs to balanced XLR analog outputs.
